Non-Vintage Waha IV
Tasting notes
Starting in 2015, we began the Waha program to allow exploration of aging wines influenced by area wild fires. Each year we stir lees from younger wines into the smoke-influenced wines. Slowly, the spent yeast, contained within the young lees, adsorb the more edgy, smokey qualities. Lees stirring, combined with years of barrel aging, add layers of texture and flavor. Aromas of spice cookies, dried leaves, brown sugar, vanilla bean, and a potpourri of dried berries transition from the glass to your palate and seemingly soak into your tongue with velvety tannins. Production notes
“This is by far the riskiest and most rewarding wine I have ever made. A small selection of barrels from 2015 have remained in the cellar, and with each passing year (2016, 2017, 2018, 2019, 2020, 2021, & 2022) the lees from the most recent vintage was saved so that these 2015 wines could be passed through that fresh lees and returned to barrel. With each year’s lees, the viscosity, character and blend of varietals became more complex in the blend. To ensure the age worthiness of this wine, I have blended select barrels from each vintage along the way to continually balance the acid, tannins and character of this long-term project.” ~Coco
